A Slow Stay with Heart


Tucked just outside the charming country town of WinghamThe Simple Patch is an eco-conscious Airbnb stay that ticks all the right boxes for a slow, sustainable getaway. Built from Hempcrete using Solar Passive design, this off-grid gem is a true reflection of its owners’ dream to raise their young family connected to the land, surrounded by good food, clean air, and nature. This was my first stay in a building made from Hempcrete, a natural building material known for its insulating properties, it was so cosy, much warmer inside than outside on the crisp Autumn night we stayed.

From the moment we arrived, I was in photographer heaven. The quaint cosy cottage with her rambling kitchen garden filled with every herb imaginable, pergola wrapped grapevine and panoramic views over mountain ranges—it was all magic. There’s even a Wildflower Loop walk leading to a picnic spot on a ridge with stunning mountain views that’s begging for a crisp glass of Semillon, cheese platter and a sunset. I'm calling it a bush walk with a rest! My wine pairing of choice, Audrey Wilkinson Semillon from nearby Hunter Valley, a lovely crisp Semillon with abundant citrus fruit flavours, limes, lemons and a hint of sherbet. Delicious. Isla & I made the most of this stunning vista and had a Mummy daughter date (she ate ALL the salami at rapid speed and I drank the wine with a similar pace) whilst my hubby swore at his drone back at the cottage. Our cheese platter was filled with local goodies from our stop in Kew at the Squeaky Gate Farm Shop and the Wingham Farmers Markets (held the first Saturday of the month).

A Wander through Historic Wingham


We spent a morning exploring Wingham, a town once thriving with the timber industry. The old buildings remain to tell the tale of yesteryear —yes, I photographed far too many gorgeous heritage doors (slightly concerned I may have an old door fetish)! There is a beautiful grassy park in the centre of town, heritage buildings everywhere one looks, an antique store packed to the rafters and even a gorgeous little nostalgic bookstore, a step back in time to when things were simpler filled with beautiful books & cosy reading nooks. Bent on Food a local institution was bustling so we stopped in for lunch. Honestly, every café in town (and pub) was busy. Proof Wingham is still alive and well!

The Simple Patch


The Simple Patch is more than a place to sleep—it’s an experience in sustainable living, country escapes, and the art of slow living. If you’re after a Mid North Coast Airbnb that blends nature, design, and heart—you’ve found it. A place to truly take a break, slow down, cosy up around the fire and watch the sunset then stick around for the star gazing show. For the early risers, sunrise was magical watching the sunrise over the mountains from the comfort of your king size bed with a pot of freshly brewed tea. This is the meaning of a slow stay!
